If it a clean plate then you don't want static grain so you would match the plate to the grain of the whatever movie footage you have.
Well to keep on the question of grain, how often does anyone remove the grain then reapply it at the end?
I do it all the time, but that's me. It depends how much of an eye your vfxsupe has. Also depends the format it is in, what it was shot on, what it is going back out on. Something shot on film is a lot more grainy then something shot on HD, though it depends the film stock and what time of day.
If you have Furnace, it has an awsome degrainer called "denoise". Regrain is also pretty amazing. I often times only have to adjust the grain size on it.
With the Shake built in filmgrain I end up having to tweak all the numbers for half my shots. Since not everyone can afford 5k for Furnace, I made my own little filmgrain tree with one for each color channel because it doesn't allow you to tweak the size or intensity individually. The StdDev and rSoftness kind of indirectly controls size and intensity, but its really sloppy.
