The usual tapering of the pen tool in photoshop is great... but this time, I really only want a taper at one end! And for the life of me I can't figure it out. Anyone out there know how to get a taper on only ONE end of a pen path when choosing to stroke the path?

I'd like to know that too...I've been using a workaround, but it's kind of tedious: I make a new layer and create my path on that, extending the path somewhat beyond where I actually need it to end. That way the thickest part of the stroke would lie where I need the thick end of my line if I could get it to taper at just one end. After stroking, I then erase the extra and merge the layer with the rest of my work.
